Traditional food is best prepared in the, well, traditional way.
We found a Creperie recently and I was very excited to see "galette" on the menu -basically, a crepe with buckwheat instead of wheat flour, giving it a very particular taste.
The "galette" I was served was very good certainly, just not what I consider a galette. I could tell this was not a pure buckwheat batter.
Asking the waitress, I was indeed told the cook mixes buckwheat and regular wheat in their batter ... ???
Ok, great, but then don't call it a "Galette" !
